Remove the skin from the persimmon and cut it into cubes. Reserve
Dissolve the calcium in the water, place the persimmon pieces inside and let them rest for about two hours
Strain and thoroughly wash the persimmon pieces under running water
Bring the sugar, water, cloves, and cinnamon stick to a boil, then simmer for 30 minutes with the persimmon pieces
Add more water if needed
Remove from heat and let it cool
Strain the persimmon pieces in a fine-mesh sieve, pass them through crystalized sugar, and allow them to dry in the sun
Serve.
