Pour boiling water over the mangos, drain and rinse in cold water
Remove the peel and pat dry well
Puree the mangos, mix with ground almonds and add the beaten egg yolks
Beat the egg whites until not too stiff
Add to the previous mixture and mix well
Line a baking dish with parchment paper greased with oil
Spread the mixture over the paper, obtaining a thickness of 1 1/2 cm, cover with parchment paper greased with oil, with the greased side facing down
Place a plate on top
After 3 days, cut into rectangles.
