3 medium grated carrots
1 small bag of shredded coconut
4 cups (chips) of sugar
1/2 teaspoon of cinnamon

Soak the shredded coconut in warm water and let it hydrate for 10 minutes
Transfer to a pan and add the grated carrots, sugar, cinnamon, and whole cloves
Mix well and simmer over low heat, stirring constantly with a wooden spoon
Cook until the mixture thickens at the bottom of the pan
Remove from heat and let cool
Pour into a serving dish and serve at room temperature or chilled.
