12 red pineapples (1.2 kg)

5 cups of granulated sugar (1 kg)
3 1/2 cups of water (840 ml)

Peel the pineapples, cut them in half, remove and discard the seeds
Reserve the pineapple halves
PREPARE THE SYRUP: In a large saucepan, combine the sugar with the water and bring to low heat, stirring occasionally, until the syrup thickens
When the syrup is simmering, add the reserved pineapples and cook for 5 minutes
Let it cool and store in an airtight container for at least 12 hours or overnight, at room temperature
Pour off the syrup into a large saucepan and reserve the pineapples
Bring the syrup to low heat until it simmers again
Add the pineapples and cook for another 5 minutes
Serve warm with white cheese slices
