In a large pot, place the sugar and water over low heat, stirring constantly, until it comes to a boil
When the syrup starts to bubble, add the guavas and simmer for an additional 5 minutes
Let it cool and store in an airtight container at room temperature for 12 hours or overnight
Strain the syrup through a fine-mesh sieve into a large pot and reserve the guavas
Heat the syrup over low heat until it comes to a boil again
Add the guavas and simmer for an additional 5 minutes
Serve warm with slices of white cheese.
