Rinse the rind of the sour oranges with a brush
Cut off a slice from the top portion of each fruit, leaving an opening for a spoon

Cook the sour oranges in plenty of water for 10 minutes, covered, in a pot
Drain and repeat the process two more times, changing the water and cooking for 20 minutes each time
Drain, let cool, and remove all pulp

Place the peels in a pot and cover with water
Let it soak for three days, changing the water several times
Drain and eliminate any remaining pulp

Bring the water and sugar to a boil, stirring until dissolved
Become syrupy, then let cool
Mix with dye and immerse the peels, allowing them to rest overnight

Reheat everything and cook for about 30 minutes, or until the syrup thickens slightly
Let cool and transfer to a serving dish.
