1 1/2 cups of sugar
1 tablespoon of grated lemon peel
1 cup of orange juice
Cranberries to taste
1/2 teaspoon of grated orange peel
2 egg yolks, beaten
1 cup of shredded coconut
5 tablespoons of olive oil
1 cup of skim milk
1/2 cup of light coconut milk
1 1/2 cups of sugar

In a saucepan, combine the sugar, milk, and olive oil and bring to a simmer over medium heat for 15 minutes, stirring constantly
Add the shredded coconut, egg yolks, orange juice, grated orange and lemon peels, and skim milk and stir until combined
Let it cook until the mixture starts to thicken at the bottom of the saucepan
After cooling slightly, roll up, decorating with cranberries.
