Peel the papayas and remove the seeds
Mash the pulp in a fine grater and place it in a large bowl
Pour 2 liters of boiling water over the top
Drain and reserve
In a large saucepan, medium heat, dissolve the sugar and water
Add the papaya and cook, stirring occasionally
Allow the syrup to thicken slightly but not dry out
Turn off the heat, let it cool, and place the sweet treat in a serving dish
