Bring the milk, syrup, agar-agar, and grated chocolate to a simmer over medium heat
Stir constantly until it thickens
Remove from heat and let cool
Refrigerate until set
Just before serving, blend with heavy cream in a blender to achieve a creamy texture
Serve chilled.
