Wash the sour oranges well
Cut them and remove the seeds
Make a juice without water
Put the peels in a pot with plenty of water and simmer for 45 minutes
Remove from heat and, using a spoon, scrape off the white part, discarding the rest
Pass through a liquidizer with a little juice
Mix the orange pulp with sugar
For each cup of pulp, add two and a half cups of sugar
Join the juice and simmer over low heat, stirring constantly to prevent scorching
When it's well thickened and releases from the bottom of the pot, remove from heat
Serve chilled
Serves 10 people.
