8 medium-sized ripe peaches (around 900g)
2 cups sugar (360g)
1 cup water (240ml)
Wash the peaches by gently scrubbing their skin
Cut each one in half lengthwise, inserting the knife up to the pit
With both hands, spin one half to each side; one of them will come loose
Using a fork or a knife, remove the pit from the other half
In a large saucepan, bring the peaches, sugar, and water to high heat
Let it boil until the fruits are tender and the skins have separated (approximately 10 minutes)
Remove from heat, transfer to a bowl, and use two spoons to remove any loose skins
Wait for it to cool and serve at room temperature or store in the refrigerator in a covered container until serving
