Place the sugar in a copper saucepan, with half a cup of water
Bring to a boil (make the same experience described above: pour off the sugar into cold water and check the consistency of the syrup)
Mix with the apricot jam and let it cook slowly, stirring until the bottom of the pan is visible
Pour onto marble or onto the lid of a biscuit box, leaving the mixture to the thickness of a centimeter
Let it cool
Cut into squares
Dust with granulated sugar.
