Place the egg whites and confectioner's sugar in a blender cup
Cover and blend on high speed for 8 seconds
Add the vanilla extract and shredded coconut
Cover and blend on high speed for 15 seconds
Pour the mixture onto a baking sheet lined with aluminum foil, about 1 tablespoon per dollop
Bake in a moderate oven, preheated, for 20 minutes
Remove the dollops while still warm using an spatula
Let cool
Yield: 16 dollops
