Heat the olive oil in a pan over medium heat
Add the zucchini and cook, covered, for 10 minutes or until tender
Season with salt and black pepper and set aside
In a bowl, beat the eggs with a manual whisk and add the flour gradually to achieve a smooth paste
Add the cream, Minas cheese, green onion, and zucchini
Preheat the oven to moderate heat (180°C) for 25 minutes or until firm and lightly golden on top
Serve warm.
