Preheat the oven to 250°C (very hot)
In a large skillet, sauté the onion, garlic, tomato, and coriander in olive oil, stirring occasionally, until the onion and tomato are soft (about 10 minutes)
Add the siri meat and stir well, cooking for about 2 minutes
Add the milk, cornstarch, and salt, and cook, stirring constantly, until the mixture thickens (about 10 minutes)
Remove from heat and add the mustard and lemon juice
Pour into a refrigerated mold of 24cm diameter
Beat the egg whites until fluffy and spread over the siri mixture
Bake in the preheated oven for about 5 minutes, or until golden brown on top
Serve immediately
