1 kg of pork loin, cut into 2cm cubes
1/4 cup of oil or butter
1 tablespoon of sweet paprika
1 large onion, chopped
5 tomatoes, peeled and chopped
salt and black pepper to taste
4 carrots, peeled and sliced
4 potatoes, peeled and quartered
2 cups of natural yogurt
3 tablespoons of finely chopped green onions

In a large Dutch oven, brown the pork in oil or butter
Add the paprika and onion and cook until the onion is softened
Add the tomatoes, salt, and black pepper to taste, then cover the pot
Reduce heat and simmer for 45 minutes, adding water as needed
Add the carrots and potatoes and continue cooking for an additional 30 minutes, or until all ingredients are tender
Stir in the yogurt
Season with water and sprinkle with green onions
Serves 4 to 6.
