300 grams of shredded palmito
1/2 cup diced pineapple
1 tablespoon chopped manioc
2 tablespoons olive oil
Salt and black pepper to taste
1/2 teaspoon grated mocha (optional)
12 tablespoons white wine secco
Aluminum foil sufficient for cutting 6 squares to assemble the palmito wraps
300 grams of shredded palmito
1/2 cup diced pineapple

Aluminum foil sufficient for cutting 6 squares to assemble the palmito wraps
Combine all ingredients, excluding wine, in a bowl
Divide into 6 portions over aluminum foil squares and drizzle with 2 tablespoons of white wine on top of each one
Fold the aluminum foil squares as if they were envelopes
Arrange them carefully on a tray and bake in the oven for 10 minutes
Serve hot.
