300g of zucchini noodles
2 medium zucchinis
2 tablespoons of butter
1 medium onion, finely chopped
1 envelope of vegetable broth mix
1 cup of natural yogurt
Salt to taste
Black pepper to taste
2 tablespoons of chopped parsley
1 tablespoon of chopped scallion
2 tablespoons of grated Parmesan cheese
300g of zucchini noodles

Cook the zucchini noodles al dente and set aside
Grate the zucchinis using a box grater
Set the grated zucchinis aside
In a pan, melt the butter over medium heat, sauté the onion until softened, then add the vegetable broth mix, yogurt, grated zucchini, salt, and black pepper
Stir well
Reduce the heat to low and simmer for 3 minutes or until heated through
Remove from heat and stir in the cooked zucchini noodles
Sprinkle with parsley, scallion, and Parmesan cheese, then serve immediately.
