Bring the water to a boil in a large pot
Add one tablespoon of salt, black pepper, chives, coriander, and onion rings
Let it simmer
Season the fish fillets with remaining salt and add them to the boiling water
Simmer for 20 minutes or until the flesh is loose from the bone
Remove the fish and set aside
Pumpkin seeds
Place the cassava flour in a bowl and gradually add the fish broth, stirring until it forms a transparent and shiny pirão (Brazilian thickening)
Transfer the pirão to a serving dish and top with the trout fillets
Serve immediately.
