Preheat the oven to 350°F (moderate)
Grease two 9-inch round baking dishes
Arrange the sweet potato slices in the prepared baking dishes
Sprinkle with flour and salt
Spread butter on top and reserve
Sprinkle sugar over the milk
Mix until well combined, then add half of the melted Gruyère cheese and mix until smooth
Pour the mixture over the sweet potatoes
Top with the remaining Gruyère cheese and sprinkle with breadcrumbs
Bake for about 1 hour, or until the sweet potatoes are tender and golden brown
Serve in 8 pieces.
