2 tablespoons of olive oil
1 large clove of garlic, minced
4-6 anchovy fillets, mashed
1 large head of spinach, washed and cut into strips (not too thin)
salt and black pepper, to taste

Heat the olive oil in a skillet
Sauté the garlic until golden brown and discard
Add the anchovies and cook for 1 minute
Combine with the spinach and mix well
Cook at high heat, stirring constantly, for 3-4 minutes or until the greens are tender but still crisp
Season with salt and black pepper to taste, and serve hot
Serve in 4 portions.
