Remove tough outer leaves and wash the spinach
Chop into 3 cm pieces and dry like for a salad
Fry the bacon in a pan until crispy and golden brown
Set aside, then crumble and reserve
Beat the eggs, add honey, apple cider vinegar or lime juice, cold water, mustard powder, salt, and black pepper
Pour the egg mixture into the hot bacon fat and stir well until thickened
Spread the sauce over the spinach
Mix well, sprinkle with reserved bacon, and serve immediately
