Cooked Shredded Beef
480 g of shredded beef from cow's hindquarters or other lean cut
2 small onions
2 soup spoons of unsalted butter
3 soup spoons of finely chopped parsley
3 soup spoons of finely chopped chives

1/2 kg of peeled and cubed manioc
1 soup spoon of salt
2 soup spoons of unsalted butter
3/4 cup of milk (approximately)
200 ml of heavy cream
16 soup spoons of grated mozzarella cheese
Starfruit, cherry tomato, and curled parsley

Cooked Shredded Beef
Place the shredded beef in a bowl, cover it with cold water, and let it soak for 12 hours, changing the water twice during that period
Drain, add clean water to cover the beef, and cook for 30 minutes in a pressure cooker
Drain off the water and shred the beef, leaving it well cleaned, without fat or nerves
Cut the two onions in half lengthwise and slice them into thin transverse semicircles
Melt the butter in a pan and fry the onion until golden brown
Add the shredded beef, parsley, and chives, then reserve
Manioc Puree
Place the manioc in a pot, cover it with water, season with salt, and bring to a boil
When tender, drain, remove the central fiber, and mash it with a fork
In another pan, melt the butter and gradually add the manioc, milk, and heavy cream
Stir well until creamy
Add more milk if needed, as the puree may become too thick
Taste and adjust the salt
Assembly
Place four round bowls (each with a capacity of approximately 500 milliliters) on top of the shredded beef, leaving about 3 centimeters of space between the meat and the bowl's edge
Next, add the hot manioc puree and immediately cover it with grated mozzarella cheese, allowing it to melt
Garnish with cherry tomatoes, starfruit slices, and curled parsley.
