250g of cured ham (in a single piece) cut into 8 cubes
2 boneless, skinless chicken breasts, each cut into 8 pieces
8 firm or fresh mango slices (300g)
8 lime wedges
Marinade for the chicken and ham:
1/3 cup white wine vinegar
4 tablespoons passionfruit juice
2 tablespoons orange juice
2 tablespoons soy sauce
1 minced clove of garlic
1/2 teaspoon grated ginger
For serving:
1/3 cup melted butter or margarine (80g)

Mix the marinade ingredients in a bowl
Add the chicken and ham pieces
Cover and let it rest for 1 hour at room temperature
When serving, assemble the skewers: one mango slice, one chicken piece, one ham cube, one lime wedge, one mango or pineapple chunk
Place in a baking dish lined with aluminum foil and bake in a moderate oven (180°C) for about 25 minutes
Flip, brush with melted butter, and bake for another 10 minutes
If preferred, grill on a barbecue
Garnish with melted butter and serve
Make 4 skewers of approximately 20cm.
