8 oranges
1/2 kg small shrimp
8 large shrimp for garnishing mousse
1/2 kg cooked and diced potato
2 tablespoons of finely chopped pickles

Cut the oranges in half and remove all the pulp
If desired, cut the rind into zigzag patterns
Mix together the potato, pickles, small shrimp, and enough mousse to moisten the mixture very well
Fill the orange shells with this mixture
Garnish with large shrimp and a bit of mousse.
