For the sauce:
1 cup ricotta or Minas cheese, fresh
2 tablespoons creamy salad dressing or mayonnaise
1/2 teaspoon mustard
2 tablespoons chopped green onions
1/8 teaspoon minced garlic
1/8 teaspoon white pepper, a little bit of milk (if needed)

Mix all sauce ingredients in a blender and blend at high speed until the mixture becomes creamy, stopping occasionally to scrape down the sides with a spatula
Then, stop the blender
Refrigerate until serving time
Prepare the skewers: mix all ingredients together in a bowl and form 21 balls
Refrigerate again
Place 3 balls on each skewer and grill or bake until desired doneness is reached
Serve with the sauce
