Fry the rice and onion in olive oil for 15 minutes, stirring occasionally
Add the boiling water and salt
Simmer slowly, covered, for 10 minutes
In the meantime, wash the spinach and cut it into pieces
Combine with the rice and mix well
Cover and continue to simmer slowly for an additional 15 minutes, stirring occasionally
Dish out in four portions.
