1 bunch of fresh spinach (use only the leaves)

Wilt the spinach with a little salted water until it's tender, then rinse and chop it finely
Mix the cheese with the butter or margarine and spinach
Bake the potatoes, without peeling, in boiling salted water until they're cooked but still firm
Peel and cut the potatoes into thin slices
In a baking dish, spread 1 tablespoon of oil, half of the potato slices, the spinach mixture, and the remaining potatoes
Mix the sour cream with eggs and pour over the potatoes
Bake in a moderate oven (180°C) for about 20 minutes or until a golden crust forms
Serve warm into 8 portions.
