3 egg whites
1 egg yolk

1 cup (chilled) of reduced orange juice

Beat the egg whites and yolk together with 2 tablespoons of dietetic emulsifier powder until a foam forms
With a wooden spoon, gradually add in the white cheese. Reserve
In a bowl, place 2 tablespoons of water
Sprinkle gelatin powder over it and let it dissolve in a double boiler
Remove from heat, add in the orange juice and rinds
Mix well and pour into the reserved cheese cream
Stir delicately and pour onto damp plates
Refrigerate for 4 hours
Combine the sauce ingredients in a pan and cook over low heat until reduced by half
Moisten the plates and decorate with orange strips
