6 tablespoons of orange juice
3 egg whites
2 tablespoons of dietetic emulsifier powder
200g of white cheese, strained through a sieve
2 tablespoons of unflavored gelatin
2 tablespoons of water

Sauce
1 cup of orange juice pulp
Orange peel cut into strips
6 tablespoons of orange juice

Whisk the egg whites with the egg yolk and two tablespoons of emulsifier until stiff peaks form
Gradually add the white cheese, stirring with a spoon
Set aside
In a bowl, combine two tablespoons of water
Add gelatin and whisk to dissolve over low heat
Remove from heat, then add orange juice and rinds
Whisk well and pour into reserved cheese cream
Stir delicately and pour onto damp plates
Chill in the refrigerator for four hours
Combine sauce ingredients in a pan and simmer over low heat until reduced by half
Garnish with strips of orange.
