Grate the pears (should take about 3 minutes) and mix with lemon juice and 2 tablespoons of cornstarch
Beat the egg whites until fluffy
Gradually add the remaining cornstarch, beating well to form firm peaks
Sieve the pears into a fine-mesh sieve and gently fold in the egg whites
Serve in cups and sprinkle with granulated chocolate
