Leave the gelatin to soak in the cold water until it has absorbed all the liquid
Bring the boiling water and sugar to a boil, then reduce the heat and let it simmer until it reaches a soft-ball stage (removing some of the syrup and immersing it in cold water, it forms a soft, pliable ball that doesn't disintegrate)
Combine the vanilla extract and salt with the gelatin
Pour the syrup slowly over the gelatin, beating constantly, until it cools and thickens
Lightly grease a refrigerator mold and dust with 1 tablespoon of confectioner's sugar
Place the gelatin mixture in the mold and spread evenly, smoothing the surface
Dust with the remaining confectioner's sugar
Let it rest for one day before cutting into squares
Pass through confectioner's sugar again
Durability: 30 minutes
If desired, add a little food coloring to give the foam its color
Note: These foams are also delicious if placed on a skewer and passed over a charcoal or wood fire.
