1/4 cup of olive oil
3 medium-sized tomatoes, seeded and chopped (360g)
1 medium onion, chopped (100g)
5 green onions, chopped
1/4 cup of chopped parsley
2 tablespoons of vinegar
3 cups of cornmeal
1/3 cup of water
4 hard-boiled eggs, diced
1 teaspoon of salt
1 small bell pepper, diced

In a medium skillet, heat the olive oil and sauté the tomato, onion, and green onions over high heat for about 5 minutes, or until they're tender
Add the parsley and vinegar, stir well, and remove from heat
Combine the cornmeal and water, mixing well
Add the egg, salt, and bell pepper and mix well
Serve hot.
