In a large skillet, heat the butter and olive oil over medium-high heat
Add the onion and cook until translucent
Add the pork loin and cook for 5 minutes on low heat, stirring occasionally
Add the olives, rice, and cornmeal
Stir well
Season with salt, pepper, and parsley to taste
Serve immediately.
