Strain the egg yolks through a sieve and combine with milk and salt
Beat well and reserve
Fry the
açúcar and water until it reaches a thread-like consistency
Paddle in the ground almonds for 1 minute more
Remove from heat and slowly add the eggs, stirring constantly
Return to heat and cook without stopping, until the bottom of the pan appears
Add butter, stir, and pour into a greased and floured baking dish
Let it rest overnight
Unmold over a surface dusted with confectioner's sugar and cut into small squares.
