'Bring a large pot to medium heat with the olive oil, onions, garlic, smoked bacon, beef, tongue or paio, and carrot.'
Let it simmer for 5 minutes
Remove the meat and add the fava beans, potatoes, thyme, hot sauce, and bay leaf
Season with salt and black pepper to taste
Close the pot and reduce heat to low
Simmer, occasionally shaking the pot and adding hot water as needed, until the flavors have melded together
Just before removing from heat, check the seasoning and adjust if necessary
