1/2 kg of white beans
water
1/2 cup of olive oil
3 or 4 cloves of garlic
2 large onions, cut into rings
1/2 teaspoon of dried thyme
1 sprig of rosemary
2 tablespoons of chopped fresh parsley
4 or 5 tomatoes, peeled and sliced
to taste salt
1/2 kg of white beans

Lay the beans in water for a day or two
Then, drain the beans and wash them in running water
Fry the onion, garlic, and herbs in olive oil
Fry until the onion is starting to brown
Add the tomatoes and cook until they look like a sauce
Add the beans, salt, and enough water to cover the beans
Bring to a boil, then reduce the heat and simmer with the lid on, stirring occasionally, until the beans are tender
Serve hot.
