0.5 kg of tender mignon fillets, cleaned and trimmed
1/4 cup of butter or margarine
1 medium onion, thinly sliced
salt and black pepper to taste
1 tablespoon of fresh thyme or oregano
1 tablespoon of lemon juice
1/2 tablespoon of all-purpose flour

Cut the fillets into thin strips
Season with salt, black pepper, and thyme to taste
Set aside
Sauté the onions in butter over low heat for 5 minutes
Fry the meat strips well, a few at a time, over high heat
Remove the cooked meat from the pan as it's done, leaving some in the pan at all times
Set aside again
When all the meat is fried, return it to the pan
Dust with flour and fry for 5 minutes, stirring occasionally
Add heavy cream and lemon juice
Heat through
Serve with croutons, and enjoy! Serves 4.
