800g filet mignon, strip loin or ribeye

100g Gorgonzola cheese
50g heavy cream

1 tablespoon cornstarch

Season the filet mignon with salt, garlic, and Malagueta pepper, then reserve
Blend in a blender the Gorgonzola cheese, heavy cream, milk, and cornstarch
In a pan, sauté the onion in butter and olive oil until caramelized
Then, pour the blended mixture into the pan and stir until it thickens
Fry the filet mignon in a skillet with butter and olive oil until well browned, flip the Gorgonzola sauce on top and serve warm.
