Preheat the oven to 250°C (very hot)
Place the beef fillets in a 30 cm x 45 cm baking dish and spread 1/4 cup of butter evenly over the surface of the meat
In a bowl, mix together the parsley, thyme, rosemary, salt, and pepper
Sprinkle this mixture over the beef fillets
Spread the remaining butter in the baking dish and put it in the preheated oven
After 30 minutes, check if the meat is cooked to your liking
If you want it even more tender, bake for an additional 30 minutes
Slice the beef into medallions and serve with the butter sauce that remains in the baking dish
