1.5 pounds ground pork
1.5 pounds lean pork, finely ground
.75 pounds cured pork, finely ground
2 eggs
1 tablespoon salt
1/2 teaspoon black pepper
1 sprig of thyme
1 bay leaf
2 tablespoons finely chopped onion
10 ounces crispy bacon strips
1.5 pounds ground pork
1.5 pounds lean pork, finely ground
.75 pounds cured pork, finely ground

Mix everything together in a bowl until well combined, including the ground pork, lean pork, and cured pork
Add the eggs and mix until they're fully incorporated into the meat mixture
Add the salt, black pepper, thyme, bay leaf, and chopped onion, mixing until everything is well combined
Lay slices of bacon in a 9x13 inch baking dish
Fill the dish with the meat mixture
Cover with more bacon slices
Bake in a moderate oven for two hours in a water bath
Let it cool before removing from the mold
Store in the refrigerator.
