Preheat the oven to 250°C (very hot)
Place the filet mignon pieces in a baking dish measuring 30 cm x 45 cm and brush the surface of the meat with 1/4 cup of butter
In a bowl, mix together the chives, parsley, thyme, salt, and pepper
Sprinkle this mixture over the filets
Spread the remaining butter in the baking dish and put it in the preheated oven
After 30 minutes, check if the meat is cooked to your liking
If you prefer it extra well-done, bake for an additional 30 minutes
Slice the filet mignon into portions and serve with the butter sauce that remains in the baking dish
