Make a paste with the garlic, thyme, salt, and pepper, and use it to season the beef
Place it in a baking dish and top it with butter in small pieces
Cover with aluminum foil and bake in a hot oven (200°C) for 20 minutes
Remove the foil and distribute the remaining ingredients around the beef
Return it to the oven without covering for another 30 minutes or until the beef is golden brown
If all the juices have evaporated before time, add 1 cup of water to the baking dish and scrape the bottom with a spoon
Remove from the oven and serve.
