Rub the meat with the olive oil and oregano on all sides
Heat a pan and fry the file mignon until it reaches your desired level of doneness
When serving, slice into thin strips, arrange on a platter, and cover with a little sauce, serving the remainder separately
For the sauce: melt the butter or margarine in a pan over low heat until the onion begins to caramelize
Add the heavy cream mixed with egg yolks and cook while stirring constantly until it thickens slightly
Do not let it boil
Add the green pepper and stir.
