4 filet mignon steaks
125g (1/3 cup) of butter
4 tablespoons of chopped green onions
2 tablespoons of Worcestershire sauce
1 tablespoon of mustard
1 teaspoon of salt

4 tablespoons of cognac
chopped parsley

Sear the filet steaks quickly on both sides, in a buttered skillet
Remove and reserve
In the same skillet, melt the butter, add the green onions, Worcestershire sauce, mustard, salt, and pepper, and cook until caramelized
Add the filets to the sauce and cook for 2 minutes per side
Flame the cognac, pour over the filets
Serve garnished with parsley, if desired.
