2 tablespoons of brown sugar
2 tablespoons of cornstarch
500g pork ribs cut into thin strips
1 large onion, sliced
2 cloves of garlic, minced
1 tablespoon of olive oil
2 tablespoons of soy sauce
4 tablespoons of vinegar
2 carrots, peeled and cut into sticks
1 can of pineapple rings in syrup (450g)
1 green bell pepper, seeded and cut into strips

Combine the brown sugar and cornstarch in a bowl and mix well
Coat the pork ribs with this mixture until they are fully covered
Season with salt and pepper
In another bowl, combine the onion, garlic, and olive oil
Microwave on high for 5-7 minutes or until softened
Add the pork ribs to the onion mixture
Add soy sauce, vinegar, carrots, and 3/4 cup of pineapple syrup
Partially cover the bowl and cook in a microwave on high for 12-15 minutes or until the pork is cooked through
Add the pineapple rings and bell pepper
Cook without covering for an additional 5 minutes
Serve immediately
