Cut the ham into thick strips
Mince the garlic and mix it with thyme and rosemary
Using a sharp knife, make a cut in the center of the meat along its length
Place the seasonings and ham inside this opening
Tie the meat with kitchen twine to maintain its shape during cooking

Melt butter in a pan and sear the meat at high heat for 5 minutes per side
Add salt and wine
Reduce heat to medium and cook the meat for 30 minutes or until browned
If needed, add water
Serve with sautéed green beans and carrots in butter
