In a pot, combine the water, salt, sugar, and lime zest
Bring to a boil over medium heat
When it starts to bubble, add the sifted flour all at once
Stir well over low heat for a few minutes
Remove from heat
Mix in the eggs one at a time, beating well after each addition
Pour everything into a blender and blend until you get a soft batter
Heat enough oil in a pot to fry the fritters
When it's hot, drop spoonfuls of the batter into the oil
Cover the pot and let the fritters cook
Remove the fritters from the oil and drain on paper towels
Serve with honey.
