Strain the egg yolks through a fine-mesh sieve
Add the vanilla
Combine the sugar and water in a saucepan and stir until the sugar dissolves
Using a piping bag or a plastic cone, place the egg yolks onto the hot syrup in threads
Before removing the threads from the syrup, rinse them with a little cold water
Place the threads on a wire rack that has been dampened
Before making new threads, let the syrup come to a boil again
When the syrup becomes too thick, add a little more water
Once the threads are ready, open them up using two forks and place them in a dish
If desired, glaze with a little of the remaining syrup.
