Preheat the oven to 250°C (very hot)
Moisten a large baking sheet with water
Unroll the puff pastry on the prepared baking sheet and reserve
Peel the squashes and slice into thin strips
Spread over half of the reserved puff pastry, forming an even layer
Sprinkle with grated coconut, ground cardamom, and other spices
Fold the remaining puff pastry over the filling
Use a fork to press all the edges together to seal tightly
Bake in the preheated oven until golden brown (about 20 minutes)
Transfer to a decorative plate and serve immediately
